Yes. Rob Nelson told TGG that hunting is one of the ways to make money in GTA 6, and that it is unlocked through a friend of Jason's. Rockstar also confirmed animal tracking with rare animals, in the style of Red Dead Redemption 2.
Rockstar told Game Informer that Leonida has more than 170 animal species, including over 60 birds and over 30 land mammals. Rockstar hasn't said which of them can be hunted. Some are clearly there to be studied: IGN saw animals being checked off a list at the zoo.
The tracking system comes straight from Red Dead Redemption 2. You can inspect animals and add them to a checklist, and Polygon reports that trackable animals fall into Rare, Discoverable and Legendary tiers. Rockstar has not named any of the rare or legendary ones yet.
Money is the big difference from fishing. Nelson told TGG that fishing is catch and release, while hunting is one of the ways Jason and Lucia can earn cash. The friend who unlocks hunting has not been shown in any footage so far, according to TGG.
